If you can find a good quality raw agave syrup then I think it would be a good replacement for the maple syrup. But I heard that some companies mix their agave syrup with corn syrup to decrease the cost/or increase their profits. Also, I heard that there is one brand of agave that IS raw but I don't know which one. The brand sold at Whole Foods is much more inexpensive than the grade B maple syrup. I think the concern would be whether you have a good quality agave syrup or not. If you do then I think it would be a good replacement.
