Hi all -- long time lurker, first time poster. Fascinating stuff, you've all prompted me to detox my bloated and polluted self.
I was intrigued by the posts from people who have noticed their fat is getting softer after supplementing with Iodine. Did a quick search and came up with this...
(please don't shoot the messenger for the fact that this study was done on hogs -- it seems if you enter "iodine fat softer" into Google, the results all seem point to pigs :0
"What Iodine value actually refers to is a laboratory test that determines the relative saturation or unsaturation of the fat, Tokach explains. “Basically, the more Iodine that attaches, the higher the Iodine value becomes, which means the softer the fat or the more unsaturated the fat is...."
So I guess what they're saying is that yes, higher iodine attach = softer fat. What's funny is the article goes on to say that the Japanese prefer and must have firm white fat on their bacon, not the softer stuff.
Considering the amount of Iodone the Japanese consume in their diet, I find it an interesting paradox that they don't like their hogs to do the same :)
