There is a great book called "Know your fats" by Mary Enig. She talks about cholesterol and what is "normal" and good fats versus bad fats. Also, "The Cholesterol Myths" by Uffe Ravnskov
Also, if she is eating healthy fats, her HDL will be high and sometimes (as my friends) it is really high and therefor the total cholesterol number will be high.
