I made the Coconut Ice Cream from the Coconut Oil forum and it's great! I have some leftover raw coconut chunks and have been eating them for dessert with fresh Watermelon chunks. They both taste sooooooooo good together.... like being on a sunny, tropical island surrounded by palm trees and a sandy beach!(chuckling!).

The coconut milk, which is clear like water, also tastes good and have saved it in a container for drinking later. I'm pretty sure it's helping my digestive system as I have been "cleaning out" more these past few days.

But the ice cream is really good!... and good for you. I'm going to buy another coconut here soon and make something else with the coconut meat. YEEEE....UMMMM!!!
