I do eat all raw these days- but I realized myself that its also good to add some cooked veggies as well.

I eat both raw or cooked tomatoes, and cooked potatoes and carrots, as well as cooked spinach.

i love raw, but there is alot to be said for certain cooked veggies also. It's always wise to balance things.

Also, we vegetarians need our oils -- From nuts, seeds and non mercury fish oils. I try to stay away from peanuts, but love cashews, and Cashew Butter--which is from roasted cashews.

I especially love that Eziekiel bread made with grain sprouts- dipped in olive oil and organic tomato sauce and garlic. yummm!!
