Cous-Cous juice "cake"


2 cups apple juice (thick unfiltered is good for this)
1 cup cous-cous (refined wheat, blond color), the kind that needs no cooking, that you can just pour on boiling water and it will fluff up.

Heat juice to a simmer.
Stir in a pinch of salt.
Stir in cous-cous and turn OFF heat.
Cover.
Let sit for 10 minutes.

Rinse a cake pan in very cold water. Drain out the water.
Add mixture. Pat it in so it keeps its shape.

When it cools, slice and serve.

For fancy, you can stir tahini into the hot juice!
