That's a good question. My understanding was that Everclear was necessary for more resinous herbs, for extraction, on the other hand, I understood that the water also extracted some properties, which wouldn't be as present in everclear, but perhaps for the alleged longer shelf life???

Great question.... I wish I knew the answer for sure.
