What you have now is Kombucha vinegar. You can use it as vinegar, similar to apple cider vinegar; it also makes a great starter liquid if you want to use a cupful of it together with part of your scoby family collection and start a new batch. You could give the rest away. Depending on temperature and also taste preferences, most people don't "brew" their kombucha longer than about 2 weeks, then bottle the liquid. I "brew" mine from 9 to 12 days. Anything longer gets too sour.
