If you aren't eating tons of tofu, then sure, go for it. Otherwise, just use the almonds. You can increase the almond dosage. :)
Tofu is a nice protein in a lot of ways, but also difficult in a lot of ways, as it is a goitregen and monkeys with the thyroid.
The value of the eggs in the drink is not only the protein but the fact that they have such a large amount of lecithin, so you're really double-dosing on lecithin, a great way to take fats out of the bloodstream.
