Okay, there's something you're not "grok" ing here. :)
if you remove grains from your diet, you remove a source of carbs and protein that cannot be replaced from just veggies alone. At that point you need to eat a bit more protein. It doesn't have to be a lot, but it has to be SOME, or you have to put the grains/legumes BACK into your diet. Why do you want to get rid of grains/legumes? What good is that going to do you? All it will do is rob you of B's, iron, essential proteins, and necessary calories. What good is that? If you think you can feel wonderful on a diet of nothing but veggies, think again!
