You have a good plan for fasting and good goals. IMO, usually body is very capable of balancing all the minerals during fasting with water only. I have done many fasts in my early days after eating junk foods and still I had no problems in fasting. Also any seriuos deficiency in our body should result in true hunger, so I don't worry too much about this.
However, many people do deplete some mi earls faster than others. Some symptoms of Potassium deficiency include......
Nerve and muscle dysfunction
Water retention
Heart palpitations
Muscle weakness
Confusion
Poor kidney function
Continual thirst
Low blood pressure
Some of these are also from magnesium deficiency.
I am currently experimenting with transdermal absorption of minerals. I know that
Epsom Salts baths have helped me with my fasting and muscle or back pain. I have also used potassium chloride twice in my bath during short fasts but did not feel too much difference before and after the bath. I know skin absorbs all stuff it comes in contact with when water is present.
I want to try potassium gluconate and potassium permanganate in my bath to see the effects during a fast and and normal eating cycles.
Distilled water is good to drink during a fast, but don't put anything else in your mouth, toothpaste, gum, etc. I am sure you know that already.
Lastly, anxiety is easily cured by liver flush, eating raw plant based diet to get micronutrients and cleaning the gut and feeding the gut with good probiotics, like Kefir, Kimchi, Sauerkraut, Kombucha, Yogurt, etc.
