FYI no diet change makes such an immediate difference in a candida infection. So I think you were just allergic to some ingredient in the bread. Anyways yeast in the bread is killed by the high heat of the baking process. What is bad about bread in regards to yeast overgrowth is that it usually contains Sugar and its carbohydrates are refined which has a sugar-like effect.
Concerning salt, if u have candida then you need to up your salt intake because salt kills fungus/yeast/candida. One reason for the candida epidemic is that people got brainwashed against salt by the "salt scare". Doctors told everyone to stop salting their food but only because they knew that junk food had a lot of salt in it. But health nuts don't eat junk food and so need to make sure they get enough salt daily (almost a level teaspoon).
