I'd say capitalism killed traditional Chinese food.
Companies in China actually have more free reign to do as they will with their consumers than in the US.
So they promote fried ramen and soy oils (and worse) as health foods, and if you go to restaurants the veggies swim in oil.
They also adopted the food pyramid because, hey, Americans do it, so it must be a good idea.
Processed white rice drove brown rice out of the market, and so if you can get meat and oil, why not just consume that.
There will be a new China Study needed - to show how dietary changes can destroy a nation, as now they have increasingly higher rates of metabolic diseases.
nitrates have gotten into the soils due to rampant pig farming as well. So now the water and soils (and hence plants) are carcinogenic.
They literally keep raising the acceptable rates of nitrates in which water is considered drinkable, year after year.
Anyway, I'm not sticking around. My son is a citizen, my wife's greencard process is almost done, then I'm back to California, before we all get sick.
