I was doing some reading last week and came across an interesting idea for making veggie broth. Since I make so much salad and cook with so many veggies I always have the "ends" which I threw away. Not anymore!
I've started saving the ends of just about everything: carrots, celery, bell peppers (seeds and all), yams, cucumbers, mushroom stems, tomatoes, the green stems of leeks and green onions ... you name it, I save it. And when my little plastic bag is full I chop up some fresh onion and toss it all together in the pot with a bit of olive oil.
Saute until smelling yummers, add about 6 - 8 cups of water & whatever spices you like (today I used salt, pepper, thyme, sage, and curry powder) and simmer one hour. I don't feel nearly so bad about tossing those cooked veggie leavings as I did about tossing all those whole veggies! Makes for great brown rice stock or for soups. And now life is much more economical! :^)
