Well, you wrote the name of the bread, so I looked it up.

"The bread is made by mixing rye and wheat flour, water, salt, yeast and a leavening agent into a dough, which is formed into a round shape. After 70 to 90 minutes..."

70-90 mins isn't very long to me... They also use yeast. I guess it would be better to use the home made sourdough starter.

Anyway, knowing that carbs aren't essential in our nutrition, I guess my main question would be what is the reason for this bread baking "aventure" if one can effectively live on animal fat and meat alone? A hobby?
