It's worth giving the Wilson's diet a try for a few weeks to see how you get on, especially if it is so different from your current diet...but include some protein with your main meals - don't just have cooked veg - i too get hungry an hour later on just veg!

I would be more mindful of exactly how much fat to carb ratio you are getting. The reason Wilson doesn't include avocado/nuts/seeds in the slow oxidiser diet is because when you're only source of protein is meat - you will be getting a high ratio of fat alongside the protein ratio. He says a ratio of 15% protein while only 6% fat - yet in the 15% flesh protein foods will provide more than 6% fat...so if you are having 6% fat ASWELL as 15% protein your REAL fat intake is much higher than 6%
Adding those other foodstuffs i mention aswell as other fats like butter etc would increase protein and fat...leading to a potential 50/50 fat carb diet without realising it...thus leaving the body to choose whether to oxidise fat or carbs for fuel - and storing the other!

It's important to opt for carbs or fat as your fuel primary source and have a ratio far higher of that fuel source than the other. Slow oxidisers require high carb...but have trouble digesting complex carbs.

It's best to know what complex carbs you react to as consuming these will set you back. Complex carbs oxidise slower (and release it's energy slower) than simple carbs in a slow oxidiser, so a large complex carb meal can make you feel tired.

Rice is a good example. For years white rice bloated me. Brown organic rice i have no problems at all. Red/white quinoa also fine, yet sweet potato can feel extremely heavy.
Go with what you know doesn't cause bowel symptoms.

I think bowel health is something to focus on too - as slow oxidisers generally have weaker digestive strength. I suffered with bowel/digestive problems since childhood so i imagine that contributed a lot to my eventual adrenals and thyroid imbalance - after 20+yrs of bowel/flora/candida problems alongside incremental never-ending stress!

The 'Kefir' support forum is a great place to learn how to make your own probiotic. Buying good quality probiotics can become hugely expensive...especially in the amount required to stabilise a poorly digestive system.

Everyone ends up tailor-making their diet - while starting off with a plan like Wilson's is a good starting point, yet if you're finding that there's no improvement you'll have to tweak it to suit your individual needs.
