Sounds like you're not digesting things well (I have same problem) and what jumped out is you eating all that gluten free bread. Yes I recommend mostly gluten free, but there's usually a *ton* of ingredients in those breads and I find the more things you eat together, the harder on digestion, even with salads and smoothies with tons of different things mixed in together.

Seems like you're not eating many greens. That's another mistake people make. Greens are packed with vitamins and minerals. Super important.

Try skipping the breads for a while and only eat a few things together. For example, when I eat potatoes, I just add one steamed green (e.g. collards) and just a pinch of sunflower seeds and little bit of tamari for taste. For my green smoothies, only two fruits and one green (e.g. kale, apples, bananas). When I eat fruit, I just one kind at time. Mono meals would be good for you.
