I tend to agree with your idea of 80/20 raw to cooked..
and I wonder where we'd put healthy, probiotic fermented foods, in that mix? Personally, I find mixtures like broccoli, shredded and fermented for a short time with other hard vegetables--perhaps green onions, carrot, ginger, maybe some pear and orange, and dried cranberries, crushed, (I make my own),along with a few juniper berries, makes a delicious live food with the benefits of cooked, as well as the synergy
of all the beneficial organisms, the bioflavenoids in the lemon skin, etc...
Since water fasting, I find I can be very happy with a little rice on occasion,(or spouted and low-cooked spelt berries... and some of this "kim-chi".
(My diet preference is mainly juice, raw fruit and vegetables, but it's often not appropriate to the 'season')
It's all about healing the terrain, (and I agree with Lilli on the healing benefits and need for good fats) and then having less food overall, imv. ( Assimilation id King, or maybe Queen)A single apple feels like a powerhouse of good--whereas for many years I was not assimilating what I was taking in--I can clearly see that now.
I recommend Erik Armstrong's intro to the ultimate kimchi available online. It's a wonderful way in to making cultured vegetables. I'm just waiting for the new moon to start a new crock or two. I feel cultured foods, home-made are the missing link for many of us. They can be superfoods, when "superfoods" as they are currently packaged and marketed are too expensive ( and unsustainable) for the majority.
