It sounds like you've got a plan worked out but I'm not sure how off-the-cuff the plan is. If you've got reading time, try Dr Jack Goldstein's book, Triumph Over Disease by Fasting and Natural Diet available for free at the Soil and Health Library

The whole book is a great read for getting the basics down but you can fast forward to the Breaking the Fast chapter for some very good advice on what to eat, how much, and when. There are many more comprehensive books that will give you the detail behind the principles but Goldstein does a great job of presenting it in an easily assimilated, user-friendly manner.
Goldstein's personal story is a powerful demonstration of the misinformation and closed-mindness that we all have to break through before we can realise our full health potential.
I recommend that, post-fast, you avoid all animal products until you've read this book and if then you decide you'd like to resume eating them, I recommend that you read these two lessons from TC Fry's Life
