I'm not sure this was mentioned in all those answers. I just want to add this one thing. You didn't say what size jar you are using. If it is a quart, don't put more than one cup total of the echinacea herb roots. That is 1/2 cup of each. If you do you will have to put some of it in another jar after those roots swell. Willow did 1 1/4 and found out that was too much and now believes in 3/4 cup total per quart (right Willow?). I did one cup per quart last time and believe that was ok. That is...one half cup of each ech. root.
