Congratulations on your success! My gluten trial remained strict for about three weeks. I did notice some improvement but nothing dramatic like yourself. We all have varying degrees of sensitivity but I don't think anybody is designed to tolerate gluten and I'm sure it does everyone some degree of harm.
I'm only of German decent, sort of Mid-Western European.
Perhaps the far southerners like the Italian must do OK otherwise they would never tolerate all that pasta.
