I would dare to say that by releasing the time restraints you are placing on your water intake, you will actually serve to 'free' your mind from thinking about water more so than by checking the clock to see if it's "time" to drink again.
During my fast I found myself more thirsty on some days than others. I had some days where I desired water quite often. On other days, I got all the way to the end of the day before I realized that I hadn't even had a drop of water.
I never overanalyzed these moments. For me, my water intake was completely based around when I got that "intuitive nudge" that I should drink some agua.
I think that water intake during a fast is one of those things that should be soley determined by You, the faster. At different stages of your fast your body will have different needs when it comes to water intake, and the only person who will know what your needs are is YOU.
So I say go for it. Keep with your schedule. If you find that it is beneficial to you, keep at it. If you find that your pre-determined drinking times are causing you any difficulty or creating mental issues within, then I would say back off from the rigidity of the schedule, and live through your intuition.
Either way, I hope you find your 14 day fast to be rewarding. Remember, the only thing that separates someone from being "able" to fast or being "unable" to fast are HANGUPS IN THE MIND. Don't let your mind trick you into thinking you aren't OK. Fasting is natural. It's tough the first few days, and once you've passed the 'hump' you'll find freedom from the mental tug towards food, making the rest of the journey very serene.

P.S.- They say that YES, periods of dehydration (dry fasting) are beneficial. It allows the body to increase the rate at which it is performing the work that is being done during a fast.
