 Well, gina, I have a scoby hotel with about 10 scobies in it and I have a GIANT scoby in my gallon jug continuous brew jar which is about 6 inches deep!!! I think they'll get as big as they have room for! I have NO IDEA what to do with them and the babies, but like you, I cannot throw them out.

Might try dehydrating them? Freezing them? I dunno. Need to research "things to do with extra scobies" or something!

They are great for compost.  And someone mentioned a while back that they can be dried and given to dogs as dog chews.  Any neighbors with dogs?
