 Great post. 

I wanted to add my two cents.

I love my kefir. I wouldn't put it in a bag. I love feeling it and squeezing it while I wash the clumpy stuff off. It's learned to stay on top so I can spoon it off and put it into my Martha Stewart stainless steel strainer to rinse it, then I have 3/4 of a jar of kefir as firm as yogurt. I love it.
