If you're talking a low carb diet, yes, I have done that for years and believe it is the healthiest way to eat!
But processed refined manmade carby foods are the real problem, not the complex God made carbs found in real food like veggies, fruit and such. It's good that carbs are kept low but the carbs eaten in their original form, will also include minerals, fiber, etc.
The biggest problem with carbs, esp. manmade carby foods, is that they cause the body to react by spiking glucose levels. Then there's the 'crash and burn' effect when the levels go low after a
Sugar spike. Sweets and sugars are big offenders with this. Even starches eaten without fats or fiber will be burned OR STORED AS FAT after being converted to glucose in the body.
IMO fat is good for us and our body needs it. And protein too! The goal is to eat the purest, cleanest foods you can get. The less man has messed with it or changed it, the better. My two cents.
