Interstitial Cystitis is a bladder disease that is caused by urine that is too toxic/acidic. It wears down the wall of the bladder so that it is very sensitive to chemicals and foods.
I have to disagree with this acidity hypothesis. First of all IC is not a disease, but rather part of a syndrome. Syndromes are a group of symptoms. And syndromes frequently if not always have more than one cause. I touch on IC in this post:

But one of the theories about the damage with IC is that high potassium in the urine leads to much of the muscular damage. Potassium is alkaline, not acidic.
We also have to keep in mind that IC is an inflammatory condition, so any damage to the bladder can cause this. This would include overextension of the bladder, such as not emptying the bladder before it gets completely full. This is a frequent problem with women who do not want to or cannot run to the bathroom frequently enough, such as if their job does not allow them. Blockage of the urethra from other factors such as endometrial tissue or overgrowth of bladder tissue blocking the urethra can also lead to IC. In men the most common cause is prostate issues preventing the bladder from emptying.
