Well you got mono poly and saturated fats.Seeds are stable until they are exposed to air/grinding and heat.I would not grind chia but would grind flax.When drinking grass juice you get all three types of fat.POLY,MONO and Saturated in the right ratio.Have you tried juicing sunflower greens?
