I don't think plastic has enough seal like you say. Also I think it could crack under pressure. I've had a few rings get a little rusty. You can also buy ring lids withouth buying the entire jar. But the plastic lids are great if you are just using the jars for storage. From now on I only buy the wide mouth quart mason jars....so much easier to add ingredients without a mess.
