Molly, for the pasta craving, and I'm totally serious here--I know it sounds awful, but try it: zucchini lingini; make ribbons with a vegetable peeler. Let marinate in a tsp. of good olive oil and a dash of Sea Salt . this 'cooks' it to the right consistency: al dente. Then make a sauce you'd like.
Try a raw one if you want, with cherry or grape tomatoes, a few soaked, sun-dried ones,(very meaty on the taste), a bit of balsamic maybe(?) and a date (for the balance of acid with sweet). To that you can add some fresh herbs. Or you can use a cooked sauce, and let it warm the raw 'pasta'. I thought I hated zuchini, until I tried this--now I think I like it better than any cooked 'pasta'(which used to be one of my weaknesses; also a thing that made me very sleepy.)
