Hi, Extra-Virgin Olive-Oil does not need to go in the frig but it needs to go in the cabinet as light makes oil go rancid. I would not buy Extra-Virgin Olive-Oil unless it is cold pressed. Extra-Virgin Olive-Oil is for salads and dipping. It goes rancid at 320 degrees so are you frying with this oil? If you are look for cancer to hit you in the future. lol, just kidding, It does become cancerous over time.

Virgin olive oil is for sauteing. If you must use virgin oil, make sure it is too cold pressed.

If you do put the oil in frig it will harden and you must set it out to come to room temperature before you can use it.

Simple dressing is juice of one lemon to 1/2 cup of evoo, salt and pepper. Mix with a wisk until thoroughly mixed. It is the best one and the simplest one. Keep in mind that 1/2 cup of Extra-Virgin Olive-Oil is 1000 calories so go light on the dressing.
