Question about olive oil


I couldn't figure out where else to put these questions, so I figured of all the places this might be most appropriate. If not then I apologize, but it is food and recipe related.

Does Extra-Virgin Olive-Oil need to be placed in the refrigerator after opening the bottle?

Also, can someone please post some simple olive oil/vinegar dressing recipes without Sugar and without too much fuss? Just something simple and healthy is what I am looking for.

One last thing, what is a good quality Extra-Virgin Olive-Oil that you can find in most health stores? I have just been buying whole foods brand, but it always seems to taste so rancid. Is that perhaps because I am storing it in the pantry rather than the fridge? Thanks in advance for any recipes/advice you might have!
