No problem. Evoo in dressing should be refrigerated. And kept no longer than three days. Keep in mind all naturalist use what is made for 24 hours. I do have a spray bottle on my counter in the kitchen which has no windows for direct light and I took foil and wrap around the outside of the bottle. Cold pressed
Extra-Virgin Olive-Oil is the best.
Now dressings with vinegar.
Here are a few.
1/4 cup of red wine vinegar
1 cup of evoo
1/2 t. of dijon mustard.
So in a bowl put the vinegar and mustard and with a wish mix well. slowly add in the oil, and as it emulsifies you can drip in more.
An easy one that I pour over couscous,
1/8 cup of orange juice
1/8 cup of balsamic vinegar
1/8 cup of evoo
mix the lot and add salt and pepper.
1/4 cup of vinegar
1 cup of evoo. Pour in slow. best if you have a food processor, but it can be done by hand. salt and pepper. You can add a T. of orange juice for added zing or some dijon. I love red wine vinegar as it has a wonderful taste or balsamic is good in this recipe. Want to go traditional go for apple vinegar.
