Hey - I've made major changes to my diet in recent years and one thing that helps me eat more veggies is to find ways that they taste good. I've turned to Thai which also uses coconut milk a lot and have learned a few good recipes. Hubby and I are both lovers of good food so healthy food must be TASTY, lol.
