What stands out in your post is a possible lack of EFA's or the good dietary oils. I think perhaps you may not be meeting your body's needs. Remember the body needs some fats in order to lubricate joints and transport certain vitamins to the body's cells as they are fat-soluble, not water-soluble. Also, these oils are also anti-inflammatory.

What I would suggest is that you also incorporate some nuts, such as walnuts into your diet, or ground up flax seeds. You may sprinkle either of these on your salad or for the nuts, you may eat a handful as a snack. These are great sources as well as olive oil, which you can use in your salad dressing.
