I believe in moving to a sustainable healthy lifestyle rather than radical dieting for weight loss. The apple/carrot appetizer salad is one of many "tips and tricks" that help people reach a healthy weight without depriving themselves.

Juicing helps one eat the huge quantities of veggies needed for health. Raw juices are rich in enzymes that help digestion. People who are overweight often have trouble digesting and absorbing the nutrients in their food. It is a funny combination of excess weight and malnutrition.

One other thought is to save the pulp from juicing and use it in soups, salads, and sauces. It adds bulk and body without calories. The more fiber you eat the healthier you are, especially soluble fiber. No reason to throw it away. I mix it into spaghetti sauce and serve it over whole grain pasta, blend it with ground turkey to make meat loaf, put it in black bean soup...

If you have serious health issues, total juice fasting can speed recovery by letting your system rest while still getting lots of enzymes, vitamins and minerals to support the healing process.

Final thought. "Mom" implies you have relatively young children. If you eat and provide a healthy and balanced diet, you'll model behavior for your kids and you will provide them with the most important foundation for health.
