I don't use olive oil for frying. In fact I don't eat anything fried except an occasional egg now and
then. I have tried it on eggs in the past, but I use butter when I do eat eggs. I will drizzle it on
salmon and then bake it, or put it on some lamb chops and bake them. It is good in pasta sauces to. I can't remember where I
read it but olive oil is not a good oil to use for frying foods and consuming fried foods are not
good for the body. They are very hard to digest for most people.
I think the olive oil gives the food a good flavor. I will mix about a tablespoon of olive oil with a 1/2 to 1 teaspoon of apple cider vinegar for salad dressing. I have used in in making corn bread with no taste of the oil. Olive oil is one of the few good fats that one can consume.
