Oh well, of salt I don't know much, but of oil yes, I'm italian! I agree with you that oil from Toscany is the best, another very precious (even more) oil comes from Liguria, it has a more subtle taste. I've always preferred the one from Toscany, but now after several liver flushes I'm beginning to change idea, and would like to have a thinner type.

I have the address of a great oil from Chianti, but it is not organic. The best oil is the novello, the one that has been just done, which is ready in december. If you ever purchase oil, buy it in that period and ask for the novello. My husband and I could finish a bottle in three days (now Erik has been litterally knocked out by the LF and just hates OO). I want to call the people of this oil and ask which organic oil they recommend me, they all know each other there, Chianti is quite small. If I have an address I'll let you know. Even average italians never know how incredible olive oil can be, but abroad it is really impossible. I've been living abroad for 5 years now, and I had to adapt. If you ever have really good oil sent directly from Italy, it will likely be a mystical experience.
