Candida creates and thrives in an alkaline gut environment, while normal human bowel flora keeps pH bowel environment in the optimum acidic range (ACIDophilus). The Alkaline/Acid value of foods has to do with their pH/mineral content as residual ash.

So for example lemon is a very acidic food as it is, but due to mineral content, when nutrients are fully digested and dissolved, it's minerals help maintain blood pH balance in the slightly alkaline range. Every tissue/organ as an optimal pH which can range from acidic to alkaline. Alkaline diet afficionados only look at the blood pH as the only thing to consider (which is indeed critical), but net pH of human body is actually on the slight acidic side.

In order to digest the food, the stomach needs to secrete highly acidic solution - this is the basis for protein digestion, which many with candida lack . Pancreatic secretions will help neutralize the acids and breakdown partially digested food into individual nutrients. Bile also helps with this and particularly emulsify fats.

Candida (which is a normal bowel habitant) begins to grow out of control either from the lack of acid forming probiotics ( Antibiotics play a big role on this), or compromised digestive function upstream due to wrong diet. Products like lact-enz, zymex, lactic acid yeast all help get rid of candida by shifting the gut pH to acidic side and digest excess candida. Since leaky gut is tied with candida, improving protein digestion (enzymes, nutrients that help stomach acid production) is necessary to heal gut wall. Pre digested fish protein is very beneficial for leaky gut (Seacure, Seagest, Galtimmune).
