I always found finding a good raw carb source to be the most difficult part of eating raw. you crave bread because you need complex carbs most likely. you can eat raw potatos or raw sweet potatoes for complex carbs, but they are pretty starchy. i never did digest them very well, but you might.

you can also try sprouting wheat berries, let the sprouts grow till they get a nice long tail on them. then you can put them through the food processor and make raw bread that way. you can dehydrate the raw sprout paste too, thats how most make raw bread. but that is a lot of work and time.
