I'm been on the coconut oil for about a month now and while I haven't noticed any weight loss, I have noticed that when I eat a coconut oil "sandwich", it fills me up for a long time. I toast a couple of slices of whole grain bread, put the coconut oil on the bread, put the honey on one side, put them together and eat them like a sandwich. BTW, thanks for the suggestion of the cinnamon -- it sounds yummy.
I gave a half a jar of the coconut oil to my mom, who has Type 2 diabetes rather badly. She ate a coconut oil sandwich for a late breakfast one day and forgot to eat lunch (very bad for a diabetic and very unusual for her). Her blood
Sugar levels were very good that afternoon and when she tested just before dinner, they were the best they had been, on so little food, for a long time (not too high, not too low). She needs to eat frequently to keep her sugar/insulin levels good and the coconut oil worked wonders. Unfortunately, since it was I and not a doctor who suggested it, it's been 3 weeks and she hasn't had any coconut oil since. It's really hard being the daughter of someone that only listens to alleopathic doctors (even though they have tried their best, and almost succeeded many times, to kill her). Sigh!
About the margarine issue -- I found that a wonderful butter spread is to mix roughly an equal amount of real butter softened at room temperature and olive oil (just pure olive oil, not virgin or extra virgin -- that tastes a bit funky) really well and then put it back in the fridge. It is really as spreadable as margarine(you can play around with amounts to see what consistency you like) and you have the option of using either salted or unsalted. Land of Lakes spreadable sounded like a good idea until I read the label -- they use canola oil, which I've read isn't that good for you, since canola is a variety of rapeseed oil.
Also, I found out that doing stir fry veggies is delicious with a combination of coconut oil and dark sesame oil, both added, in that order, last.
If I ever find a really good weight loss tip, I'll post it. Due to auto immune/environmental illness, my metabolism now makes the giant sloth look like Speedy Gonzales. Any tips, anyone? Thanks.
