THE IMPORTANCE OF FRESH JUICES
One of the finest ways to obtain necessary nutriments in the diet is through the intake of raw fruit and vegetable juices. Many of the readily available vitamins and minerals in fruits and vegetables are needlessly lost during cooking, boiling, frying and other ruinous food preparation processes. Nature presents fruits and vegetables to us in a wholesome state, containing all the essentials which can sustain a high quality of life in a healthy body. Man, in his insatiable desire to improve upon Nature, usually comes up with an end product that hardly resembles the Creator's original design in appearance or function.
We see the market shelves (and this includes the health stores) loaded with all sorts of "health giving" bottled juices derived from numerous sources--this includes the common garden variety vegetables and the most exotic tropically-grown fruits. The main thing that these juices have in common is this: THEY ARE ALL DEAD. During the bottling or canning process the precious juices are heated to temperatures far above the sun's ripening rays in the field or orchard. We know that whenever a food is heated above approximately 130 degrees F., many of the life-giving enzymes are destroyed. The vitamins and minerals contained within the substance are converted to inorganic and inassimilable toxins. These inorganic poisons are extremely detrimental to the system because often they cannot be easily eliminated by weakened organs.
Several years ago we visited a large orange juice processing plant near the shores of the Salton Sea in Southern California. One would imagine that the juices of ripe oranges from the nearby orange groves would be immediately frozen and shipped out. This was not so, however. The fresh orange juice underwent a process which included heating the juice to a temperature many degrees above the boiling point of 212 degrees F. This was a necessary part of the pasteurization process in order to kill any bacteria present in the juice. It also killed the juice. The natural Vitamin C which was destroyed by the extreme heat was replaced by the addition of synthetic Vitamin C to the "soup" at the end of the process.
You may recall that we have suggested the use of bottled juices in some of our cleansing and rejuvenation programs, apple, grape, and so on. This is true ONLY when freshly squeezed juices are unavailable or out of season. There is no satisfactory substitute for "the real thing."
Youngsters whose taste buds have not yet been numbed by years of food abuse (the addition of tons of salt during a lifetime to "flavor" the food, for example) can taste the difference between first class and "steerage" products immediately. Freshly squeezed orange juice was always a part of our breakfast when our family lived up in Washington state. We remember one morning when we ran out of fresh oranges to make the juice. I went down to the local store and purchased some frozen orange juice to substitute for the fresh. We reconstituted it and placed glasses of it before our children who were accustomed to the freshly squeezed item. They took one swallow and said, "Yuk! This stuff tastes terrible. What did you do to it??" They instinctively knew that there was something wrong with it. Anyone who has tasted canned carrot juice and fresh carrot juice has had the same reaction. The insipid cooked carrot liquid in the can has been responsible for many people never trying carrot juice again---even if it was fresh and sweet. Carrot juice is one of the best foods available. We'll talk more about it later.
Fresh juices are easily digestible and do not tax the digestive system. We can compare them to a blood transfusion from the plant to the human body. With fresh juice taken within a few minutes after squeezing, the vital source of energy goes directly into the bloodstream. All juices should be sipped slowly and "chewed" like solid food. They should be swished around in the mouth and thoroughly mixed in with the saliva in order to properly begin the digestive process. Many juices are rich and not compatible with the gastric juices when an insufficient amount of saliva is present. This may result in discomfort or regurgitation. So juices should not be gulped or drunk quickly in large amounts. Let me tell of an incident which occurred in downtown Salt Lake City. We had a small health store and juice bar in one of the busiest sections of downtown. A woman came into the juice bar and demanded to have a large glass of raw beet juice. I told her that it was not wise to drink such a large glass of straight beet juice if she was not accustomed to doing so, but that she could mix the carrot juice with the beet so that the body would take it more easily. "Oh NO," she said. "Just give me that large glass of beet juice NOW. And hurry up about it. I don't want to hear any more of your stupid talk." Well, the customer is always supposed to be right, so I gave her a large glass of beet juice which she immediately gulped down. She left the money for the juice on the counter and quickly rushed out of the store and into the street. I was very glad that she made it out, for as soon as she was on the sidewalk, she spewed forth out of her mouth the entirety of the red beet juice much to the alarm of the passersby who probably thought she was suffering from a gastric hemorrhage!! The beet juice was not mixed with her saliva and was irritating to her system in this form causing her body to rapidly reject it.
Quenching the thirst
The roots of the plant go down into the earth and take in food and minerals in solution via osmosis into the plant. Here these ingredients are processed and changed from inorganic to organic, and if properly selected as to juice type, this natural "blood" or "lifeline" in the plant is a perfect food and liquid for man, both for the required nourishment and liquid used by the systems. During summertime, for instance, drinking
Celery juice not only quenches the thirst, but also supplies the natural organic salts in proper quantities so that the heat is not noticed (this should be used instead of the inorganic salt tablets). While others are in misery and sweltering with the heat, you are enjoying life. You have, in this simple procedure, properly thinned down a sluggish and heavy blood stream so that it flows rapidly and with ease through the body to carry off the poisons and wastes. And this is the reason why a heavy meat and starch eater will suffer apoplexy and strokes long before the heat even bothers the vegetarian or fruitarian.
Energy without stress
Juices will supply energy without overworking the body. This is because nearly all fresh juice from fruits and vegetables is partly assimilated immediately upon entering the mouth, going directly into the blood stream as an oral transfusion. The juice will not wear out the digestive organs with a lot of excess materials that are difficult to digest and burdensome to eliminate.
Juice therapy
Though we have had years of experience in juice therapy and have seen amazing numbers of miraculous healings with it alone, nevertheless, problems continually arose with patients from time to time that juice therapy could not handle. We found the reason for the distress and after accenting the program introduced so ably by Professor Arnold Ehret in his mucusless diet healing system, it was here that we saw our mistake with using a straight juice therapy. With fruit juice especially-but with almost any type vegetable juice also-the sticky mucus and waste materials would break loose from the tissues and be carried out to be eliminated, but there it stayed, in large, gluey deposits. Use liquids only to clean out the accumulated filth from the body. So with all of your cleansing aids, these should be used "in moderation" and "with prudence and skill"! We highly recommend the use of fruit and vegetable juices-and for them to be used copiously-but as they were intended to nourish the tissue and break loose the waste, these should always be coupled with raw and cooked (low heated) fruits and vegetables as aids in elimination. After a person's body is completely cleaned of all waste (up to 7 years on the program), and during the long cleansing process, more and more juice can be used; but the roughage will always be needed.
A juicer is the most valuable addition to the family's kitchen equipment. It is an investment that will pay for itself many times over. Especially if you have been purchasing fresh juices from the store at a high price. Vegetables (especially carrots) can be obtained in bulk and juiced at home, thus insuring a tremendous saving.
There are two basic types of juicers: a centrifugal juice extractor and a masticator juicer. The centrifugal juicers separate the pulp from the juice by means of stainless steel blades and a centrifugal action chamber. These juicers make about a
quart of juice before the pulp needs to be removed from the mesh basket within the chamber. The masticator juicer grinds or chews the vegetables with a large metal "tooth" and the juice is strained through a stainless steel mesh. The most popular juicer of this type is the Champion juicer. It is very sturdy, almost industrial in design, and can make several gallons of juice before needing to be cleaned. The pulp is expelled through an opening and can be collected outside the machine. We have found this model to be very satisfactory. It can also grind nuts into butter and puree fruits and vegetables.
Dr. N. W. Walker was one of the foremost authorities on fresh juices and fresh juice therapy. He was a living testimony (he lived well over 100 years of age) to the benefits of raw juices which he advocated since in his seventies. He has several books on the market which can give you a good knowledge of the virtues of juices. His books list the vitamin and mineral contents of juices, and the suggested proportions of juice combinations for the therapeutic uses of juices. His latest book includes a list of juices and proportions thereof compiled by an M.D. who has successfully used juice therapy in his practice. Following this article is a list from Dr. Arthur W. Snyder's Booklet, Nature's Way to Health, published in 1969 by Hansen's. It is a summary of ailments along with the juices that are most effective in restoring health. Most disease is a result of malnutrition and using foods supplying the necessary nutriments will often restore a balance to the ailing body. The fresh raw juices are such life-giving foods.
NOTES ON CARROT JUICE
John B. Lust, in his book, The New Ray Juice Therapy quotes the learned Ragnar-Berg on carrots:
They have some protein, are rich in carbohydrates, potassium, sodium, and calcium, there is a high alkali excess, a trace of
Iodine and a good proportion of all vitamins. They constitute a powerful cleansing food. A large amount of carrot carbohydrate is one of the most effective means of changing the intestinal flora from a putrefactive to a non-putrefactive type.
Medicinal uses: Tonsillitis, colitis, appendicitis, anemia, gravel, acidosis, blood poisoning, faulty circulation, ulcers, rheumatism, indigestion, increase milk secretion, poor teeth (high in calcium), acne, adenoids, cancer, etc.
Preparation: Whole, juice or cooked. The juice is preferred, as the therapeutic virtues are thereby sufficiently concentrated to supply the restorative elements that are needed.
Dosage Juice: 1-6 pints a day.
Administration: The juice is taken orally, or is used as a wash or in a poultice form externally.
Snowbound and healthy
The garden carrot is one of the great foods of all time. There is a little town in Idaho which had its main crop in carrots, and they did so well there that every farm was in carrots. This was still in the "horse and buggy days" and the area was quite isolated, so when fall came, the people would harvest the carrots and take them down to a larger town and trade for supplies as staples for the winter. But one particular winter they got snow-bound before they could take the carrots down, so they had raw carrots, fried carrots, grated carrots, juiced carrots, carrot salads. That is about all they lived on. And, you know, that was the first year in the history of that town that there was no sickness; not even a case of sniffles! Well, the next year, being pretty smart people, they didn't take the chance of the repeat performance of getting snowbound again, so they hurried down early to get their usual dietary staples and, of course, they had their regular sickness, and they kept their local doctor happy by keeping him in business.
Dr. Loretta Foote
Dr. Loretta Foote was one of the sweetest women we ever knew; and all she did was try to help people. She was an herbalist, and when we had our offices on 1st South in Salt Lake City, she was on our staff as the obstetrician. She was a woman that delivered thousands of babies and most of them were delivered in the home; in fact, our five were delivered in our home by natural childbirth, assisted by Dr. Loretta Foote. Dr. Foote had a friend, and a very prominent lady of Salt Lake (most people would know the name were it mentioned), who was told by her doctors that she was dying of cancer, and this was before the days of the juicers. Dr. Foote grated carrots for her with the old "knuckle-skinner" (grater) and squeezed out the juice by hand with cloths, until she would get a
quart or so every day (and sometimes 2-3 times per day), so you can imagine how much dedicated effort that this took. Dr. Foote fed this to her friend, and she was completely cured, to the astonishment of the doctors. This prominent lady later wrote a booklet on how she was healed of cancer, and we have one of the very, very few of those left in existence. Then this fine lady sponsored Dr. Foote in a health store, the first health store in America, and they went broke! So this appreciative lady said, "They don't want us here; let's go to the coast." Many of you have been to the coast and have seen the many, many juice bars, health stores-well, these two great ladies started the first health store and juice bar on the coast, the first ones that were successful in the United States. And these started to gain in popularity. Later Dr. Foote returned to Salt Lake City and started another health food store, and this time it was a success. Here is a wonderful pioneer lady who did wonders with the juice of our common garden carrot!
The carrot poultice is good for man or beast
Traveling from our office in Evanston, Wyoming, a number of years ago, I had to go over to Woodruff on a house call, to a family that was very, very sick. They improved so rapidly and were so pleased with our program that it was with some reluctance and embarrassment that the man said to me "Would it insult you if we asked you something about an animal?" I said, "No, we're good for man or beast." He said that he had a favorite horse outside that got tangled up in the barbed wire. "The vet was here yesterday and used the last ointments, salves and things that he knew about, and then he said there was only one thing more left to do, as the gangrene is setting in, so just shoot the horse." Well, this lovely animal was part of the family. They had quite a few children, and they still loved the horse, so he said, "What can we do?" So we went out and looked at the horse's leg. I said "All right, you have been taking carrot juice and you have some pulp there and a ton or so of carrots that you have brought in from your field, just grind up carrots and make a great big poultice and cover that horse's leg. that will do him good, and then give the horse all the carrots it can eat." Within seven days time that horse's leg was completely healed. The flesh was fully restored.
One of the most common misconceptions regarding carrot juice is that one will start to develop orange or yellow colored skin after steadily drinking the juice because of the carotene content in the juice. This is not true. The development of yellowish skin is due to the fact that carrot juice is a great liver cleanser and the toxicity within the body is coming to the surface. Keep up with the carrot juice and the symptoms will soon disappear. The formerly constipated liver is reconditioned once again to experience a free flow of bile the excess of which is eliminated through our largest eliminative organ, the skin. I have personally experienced this phenomenon during a time when we prepared hundreds of gallons of carrot juice a week for sale. Because the juice was so abundant and available, I drank it for nearly every meal...sometimes instead of meals. My wife soon commented upon the yellow cast which my skin began to take on. I continued drinking the juice, however, and within a week my skin color was back to normal. But my liver had gone through a wonderful cleansing! It is often a surprise to me that the most learned of health authorities will try to sell you the carotene theory without any sort of proof, personal experience or background.
In the fifth century Before Christ, Hippocrates said, "Leave your drugs in the chemist's pot if you can heal the patient with food." Many seemingly miraculous cures have been effected upon some extremely wasting diseases through the raw juice regime. Our own "Incurables" program has helped many, many people out of their deathbeds and into a new life. The majority of nourishment is derived from juices: apple, carrot, and grape. The program is often tried as a last resort: that is when all other standard drug therapy has failed. Often a patient has been sent home from the hospital to die because the family ran out of money, or there was otherwise no hope of recovery. Some of the persevering and desperate relatives took their loved ones on the Incurables route. These once doomed persons are walking the earth today --- alive and healthy.
Dr. H. E. Kirschner, M.D. treated people for over 50 years. In his book, Live Food Juices he recounts many fabulous results in his cases of incurable diseases where live juices were used. Some of these diseases were malnutrition, leukemia, failing eyesight, arthritis, bleeding hemorrhoids, obesity, various cancers, kidney disease, bladder tumors ... the list could go on. The doctor states that there could be a table loaded with all types of vegetables and we could still be suffering from malnutrition because our bodies could not possibly eat enough to provide the missing nutriments. With the juices, the pulp is eliminated and we are left with the life-giving vital principles contained within the vegetables. It is, of course, best to use only the organically grown fruits and vegetables (those free of pesticides and preserving chemicals) for our juices. But Dr. Walker states that the detrimental toxins remain in the pulp, and this we can discard.
Fresh raw fruit and vegetable juices are extremely tasty either alone or in combination. The very famous green drink (a must for those lacking potassium) can be made from spinach, celery, parsley, carrot and beet tops. Any other nutritive "weeds" in the yard such as lamb's quarter, comfrey, alfalfa, mint, etc., can be added. The green drink is the epitome of refreshing, living energy from plant sources. Some people combine pineapple juice with the greens for a sweeter drink. Green drink can also be made in a regular blender with pineapple juice and greens. A helpful drink for asthmatic conditions includes pineapple juice, comfrey (fresh leaves), and fresh mint leaves to taste. If the green drink is made in the blender, you may wish to strain out some of the pulp.
You may hear also that the oxalic acid found in members of the goosefoot family such as spinach and chard prevent the absorption of calcium, and is poisonous to the system. We can clear this fear by telling you that the oxalic acid is in an organic, assimilable state. If we were to cook our spinach this would cause the oxalic acid to become inorganic and toxic. The amount of oxalic acid taken only prevents an equal amount of calcium to be bound. By drinking other juices, the calcium intake can far exceed the small amount of calcium bound, so there is no possibility of a calcium deficiency from the ingestion of spinach juice. Dr. Shook gives and excellent discussion on the difference between organic and inorganic oxalic acid in his Advanced Treatise In Herbology.
We suggest that you look into the possibilities of including fresh, raw fruit and vegetable juices in your family diet. With the many sources available on the subject you can familiarize yourself with what has been done with juice therapy to restore and maintain health. Fresh vegetables and fruits are usually easy to obtain all year around and if there is no nearby source during the winter months, root crops like carrots, beets, potatoes and turnips can be stored in a cool, dark place. Apples will often keep through the winter if properly stored. Let us take the best from man's technology (the juicers) and use them in the beneficial processing of the Creator's life-giving foods.

Why I believe that giving up milk is the key to beating breast cancer... Professor Jane Plant is a wife, a mother, and widely respected scientist, who was made a CBE for her work in geochemistry. When she was struck by
Breast Cancer in 1987 at the age of 42, her happy and productive existence seemed destined to fall apart. But despite the disease recurring a further four times, Jane refused to give in. As she describes in an inspiring new book, [Your Life In Your Hands] serialised by the Mail this week, she devised a revolutionary diet and lifestyle programme that she believes saved her life and can cut the chances of other women falling prey to the disease. Her theory remains a controversial one - but every woman should read it and make up her own mind. Today, she explains her personal breakthrough... I had no alternative but to die or to try to find a cure for myself. I am a scientist - surely there was a rational explanation for this cruel illness that affects one in 12 women in the UK? I had suffered the loss of one breast, and undergone radiotherapy. I was now receiving painful chemotherapy, and had been seen by some of the country's most eminent specialists. But, deep down, I felt certain I was facing death. I had a loving husband, a beautiful home and two young children to care for. I desperately wanted to live. Fortunately, this desire drove me to unearth the facts, some of which were known only to a handful of scientists at the time. Anyone who has come into contact with
Breast Cancer will know that certain risk factors - such as increasing age, early onset of womanhood, late onset of menopause and a family history of breast cancer - are completely out of our control. But there are many risk factors, which we can control easily. These 'controllable' risk factors readily translate into simple changes that we can all make in our day-to-day lives to help prevent or treat breast cancer. My message is that even advanced breast cancer can be overcome because I have done it. The first clue to understanding what was promoting my breast cancer came when my husband Peter, who was also a scientist, arrived back from working in China while I was being plugged in for a chemotherapy session. He had brought with him cards and letters, as well as some amazing herbal suppositories, sent by my friends and
Science colleagues in China. The suppositories were sent to me as a cure for breast cancer. Despite the awfulness of the situation, we both had a good belly laugh, and I remember saying that this was the treatment for breast cancer in China, then it was little wonder that Chinese women avoided getting the disease. Those words echoed in my mind. Why didn't Chinese women get breast cancer? I had collaborated once with Chinese colleagues on a study of links between soil chemistry and disease, and I remembered some of the statistics. The disease was virtually non-existent throughout the whole country. Only one in 10,000 women in China will die from it, compared to that terrible figure of one in 12 in Britain and the even grimmer average of one in 10 across most Western countries. It is not just a matter of China being a more rural country, with less urban pollution. In highly urbanised Hong Kong, the rate rises to 34 women in every 10,000 but still puts the West to shame. The Japanese cities of Hiroshima and Nagasaki have similar rates. And remember, both cities were attacked with nuclear weapons, so in addition to the usual pollution-related cancers, one would also expect to find some radiation-related cases, too. The conclusion we can draw from these statistics strikes you with some force. If a Western woman were to move to industrialized, irradiated Hiroshima, she would stash her risk of contracting breast cancer by half. Obviously this is absurd. It seemed obvious to me that some lifestyle factor not related to pollution, urbanization or the environment is seriously increasing the Western woman's chance of contracting breast cancer. I then discovered that whatever causes the huge differences in breast cancer rates between oriental and Western countries, it isn't genetic. Scientific research showed that when Chinese or Japanese people move to the West, within one or two generations their rates of breast cancer approach those of their host community. The same thing happens when oriental people adopt a completely Western lifestyle in Hong Kong. In fact, the slang name for breast cancer in China translates as 'Rich Woman's Disease'. This is because, in China, only the better off can afford to eat what is termed 'Hong Kong food'. The Chinese describe all Western food, including everything from ice cream and chocolate bars to spaghetti and feta cheese, as 'Hong Kong food', because of its availability in the former British colony and its scarcity, in the past, in mainland China. So it made perfect sense to me that whatever was causing my breast cancer and the shockingly high incidence in this country generally, it was almost certainly something to do with our better-off, middle-class, Western lifestyle. There is an important point for men here, too. I have observed in my research that much of the the data about prostate cancer leads to similar conclusions. According to figures from the World Health Organization, the number of men contracting prostate cancer in rural China is negligible, only 0.5 men in every 100,000. In England, Scotland and Wales, however, this figure is 70 times higher. Like breast cancer, it is a middle-class disease that primarily attacks the wealthier and higher socio-economic groups - those that can afford to eat rich foods. I remember saying to my husband-- 'Come on Peter, you have just come back from China. What is it about the Chinese way of life that is so different. Why don't they get breast cancer?' We decided to utilize our joint scientific backgrounds and approach it logically. We examined scientific data that pointed us in the general direction of fats in diets. Researchers had discovered in the 1980s that only l4 % of calories in the average Chinese diet were from fat, compared to almost 36% in the West. But the diet I had been living on for years before I contracted breast cancer was very low in fat and high in fibre. Besides, I knew as a scientist that fat intake in adults has not been shown to increase risk for breast cancer in most investigations that have followed large groups of women for up to a dozen years. Then one day something rather special happened. Peter and I have worked together so closely over the years that I am not sure which one of us first said: 'The Chinese don't eat dairy produce!' It is hard to explain to a non-scientist the sudden mental and emotional 'buzz' you get when you know you have had an important insight. It's as if you have had a lot of pieces of a jigsaw in your mind, and suddenly, in a few seconds, they all fall into place and the whole picture is clear. Suddenly I recalled how many Chinese people were physically unable to tolerate milk, how the Chinese people I had worked with had always said that milk was only for babies, and how one of my close friends, who is of Chinese origin, always politely turned down the cheese course at dinner parties. I knew of no Chinese people who lived a traditional Chinese life who ever used cow or other dairy food to feed their babies. The tradition was to use a wet nurse but never, ever, dairy products. Culturally, the Chinese find our Western preoccupation with milk and milk products very strange. I remember entertaining a large delegation of Chinese scientists shortly after the ending of the Cultural Revolution in the 1980s. On advice from the Foreign Office, we had asked the caterer to provide a pudding that contained a lot of ice cream. After inquiring what the pudding consisted of, all of the Chinese, including their interpreter, politely but firmly refused to eat it, and they could not be persuaded to change their minds. At the time we were all delighted and ate extra portions! Milk, I discovered, is one of the most common causes of
food allergies . Over 70% of the world's population are unable to digest the milk sugar, lactose, which has led nutritionists to believe that this is the normal condition for adults, not some sort of deficiency. Perhaps nature is trying to tell us that we are eating the wrong food. Before I had breast cancer for the first time, I had eaten a lot of dairy produce, such as skimmed milk, low-fat cheese and yoghurt. I had used it as my main source of protein. I also ate cheap but lean minced beef, which I now realized was probably often ground-up dairy cow. In order to cope with the chemotherapy I received for my fifth case of cancer, I had been eating organic yoghurts as a way of helping my digestive tract to recover and repopulate my gut with 'good' bacteria. Recently, I discovered that way back in 1989 yoghurt had been implicated in ovarian cancer. Dr Daniel Cramer of Harvard University studied hundreds of women with ovarian cancer, and had them record in detail what they normally ate. I wish I'd been made aware of his findings when he had first discovered them. Following Peter's and my insight into the Chinese diet, I decided to give up not just yoghurt but all dairy produce immediately. Cheese, butter, milk and yoghurt and anything else that contained dairy produce - it went down the sink or in the rubbish. It is surprising how many products, including commercial soups, biscuits and cakes, contain some form of dairy produce. Even many proprietary brands of margarine marketed as soya, sunflower or olive oil spreads can contain dairy produce. I therefore became an avid reader of the small print on food labels. Up to this point, I had been steadfastly measuring the progress of my fifth cancerous lump with callipers and plotting the results. Despite all the encouraging comments and positive feedback from my doctors and nurses, my own precise observations told me the bitter truth. My first chemotherapy sessions had produced no effect - the lump was still the same size. Then I eliminated dairy products. Within days, the lump started to shrink. About two weeks after my second chemotherapy session and one week after giving up dairy produce, the lump in my neck started to itch. Then it began to soften and to reduce in size. The line on the graph, which had shown no change, was now pointing downwards as the tumour got smaller and smaller. And, very significantly, I noted that instead of declining exponentially (a graceful curve) as cancer is meant to do, the tumour's decrease in size was plotted on a straight line heading off the bottom of the graph, indicating a cure, not suppression (or remission) of the tumour. One Saturday afternoon after about six weeks of excluding all dairy produce from my diet, I practised an hour of meditation then felt for what was left of the lump. I couldn't find it. Yet I was very experienced at detecting cancerous lumps - I had discovered all five cancers on my own. I went downstairs and asked my husband to feel my neck. He could not find any trace of the lump either. On the following Thursday I was due to be seen by my cancer specialist at Charing Cross Hospital in London. He examined me thoroughly, especially my neck where the tumour had been. He was initially bemused and then delighted as he said, "I cannot find it.' None of my doctors, it appeared, had expected someone with my type and stage of cancer (which had clearly spread to the lymph system) to survive, let alone be so hale and hearty. My specialist was as overjoyed as I was. When I first discussed my ideas with him he was understandably skeptical. But I understand that he now uses maps showing cancer mortality in China in his lectures, and recommends a non-dairy diet to his cancer patients. I now believe that the link between dairy produce and breast cancer is similar to the link between smoking and lung cancer. I believe that identifying the link between breast cancer and dairy produce, and then developing a diet specifically targeted at maintaining the health of my breast and hormone system, cured me. It was difficult for me, as it may be for you, to accept that a substance as 'natural' as milk might have such ominous health implications. But I am a living proof that it works and, starting from tomorrow, I shall reveal the secrets of my revolutionary action plan. All mature breast milk, from humans or other mammals, is a medium for transporting hundreds of chemical components. It is a powerful biochemical solution, designed specifically to provide for the individual needs of young mammals of the same species. Jane says: "It is not that cow's milk isn't a good food. It is a great food- for baby cows. It is not intended by nature for consumption by any species other than baby cows. It is nutritionally different from human breast milk, containing three times as much protein and far more calcium.' Breast milk, like cow's milk, contains chemicals designed to play an important rote in the development of young cattle. One of these, insulin growth factor IGF-1,causes cells to divide and reproduce. IGF-1 is biologically active in humans, especially during puberty, when growth is rapid. In young girls it stimulates breast tissue to grow and, while its levels are high during pregnancy, the hormones prolactin and oestrogen are also active, enlarging breast tissue and increasing the production of milk ducts in preparation for breast-feeding. Though the concentration and secretions of these hormones in the blood are small, they exert a powerful effect on the body. All these hormones are present in cow's milk. IGF-1 is identical in make-up, whether in human or cow's milk, but its levels are naturally higher in cow's milk. It is also found in the meat of cows. High levels of IGF-1 in humans are thought to be a risk factor for breast and prostate cancer. A 1998 study of pre-menopausal women revealed that those with the highest levels of IGF-1 in their bloodstream ran almost three times the risk of developing breast cancer compared with women who had low levels. Among women younger than 50, the risk was increased seven times. Other studies have shown that high circulating levels of IGF-1 In men are a strong indicator of prostate cancer. Interestingly, recent measures to improve milk yields have boosted IGF-1 levels in cows. Could IGF-1 from milk and the meat of dairy animals cause a build-up in humans, especially over a lifetime, leading to inappropriate cell division? Though we produce our own IGF-1, could it be that the extra amounts we ingest from dairy produce actually cause cancer? Jane Plant already knew that one way the high-profile drug tamoxifen, used in the treatment of breast cancer, is thought to work by lowering circulating levels of IGF-1. IGF-1 is not destroyed by pasteurization, but critics argue that it is destroyed by digestion and rendered harmless. Jane believes the main milk protein, casein, prevents this from happening and that homogenization, which prevents milk from separating into milk and cream, could further increase the risk of cancer-promoting hormones and other chemicals reaching the bloodstream. She also believes there are other chemicals in cow's milk that may be responsible for sending muddied signals to adult tissue. Could prolactin, released to stimulate milk production in cows, have a similar effect on human breast tissue, effectively triggering the same response and causing cells to become confused, stressed and start making mistakes in replicating their own DNA? Studies have confirmed that prolactin promotes the growth of prostate cancer cells in culture. Another hormone, oestrogen, considered one of the main risk factors for breast cancer, is present in milk in minute quantities. But even low levels of hormones are known to cause severe biological damage. Microscopic quantities of oestrogen in our rivers are powerful enough to cause the feminisation of many male species of fish. While oestrogen in milk may not pose a direct threat to tissues, it may stimulate the expression of IGF-1, resulting in long-term tumour growth. Jane, who has found growing support for her theories from cancer specialists, stresses that she is not setting out to attack more orthodox approaches. British scientist Jane Plant, who believes a dairy-free diet helped her recover from breast cancer, talks to Katie Donovan Tempted by a cream bun, you talk yourself out of it with thoughts of all that unhealthy fat clogging up your arteries. You opt for a low-fat yoghurt instead, with skimmed milk in your tea, congratulating yourself on your sensible self-control. Think again. According to a ground-breaking new book about breast cancer (which kills over 600 women in Ireland annually), dairy products, whether low-fat or full cream, should be off everyone's menu overnight. (They are also culpable with regard to prostate cancer, so that really means everyone). Prof Jane Plant CBE, author of Your Life in Your Hands, was diagnosed with breast cancer 13 years ago. She was 42, a successful geochemist (she is now chief scientist of the British Geological Survey), and led, she thought, a healthy life. There was no history of breast cancer in her family. She discovered that "only five to 10 per cent of breast cancers are the result of inherited genes, and the disease may not always develop, even in those carrying the mutated gene." Bamboozled by jargon and frozen with panic, she fell back on her scientific training to try and figure out how she had developed the disease, and how best to cure herself. She went on the Bristol diet, she had a mastectomy, she had radiotherapy, she had her ovaries irradiated (to induce menopause and eliminate oestrogen), she asked questions and did lots of research. To no avail. By the time of the cancer's fifth recurrence (it spread into the lymph), she was given a course of chemotherapy and three months to live. She had an egg-sized tumour on the side of her neck. Brainstorming one night with her fellow scientist husband about why, in the West, one in 10 women get breast cancer (one in 14 in Ireland), while in China it's only one woman in 10,000, the pair came up with the simple answer: Chinese people don't eat dairy products. Plant eliminated all dairy products (including goat and sheep) from her diet. Six weeks later, the tumour had disappeared. When I meet her she is a youthful-looking woman in her mid-fifties, quaffing mint tea and eating a tuna sandwich (no butter or mayonnaise). She has stayed on her dairy-free diet and has remained clear of cancer. Giving up dairy products was only part of a healthy regimen she had been following throughout her cancer, including taking folic acid and zinc supplements, drinking filtered water and never consuming anything that had been packaged in plastic (phthalates, harmful carcinogenic chemicals, leak from soft plastic into food). In spite of her best efforts it was only after she gave up all dairy products that the cancer disappeared. Sixty-three other women who had breast cancer and who came to her for advice, also recovered after giving up dairy products. So how, I ask, can dairy products-- beloved of both the Irish and British alike, not to mention the Americans whose diet is 40 per cent dairy-- have such a lethal effect? "Milk is designed as the perfect food for newborn animals. They can't eat ordinary food, they are dependent on milk to keep development and cell differentiation going. But milk contains a chemical-- insulin-like growth factor, or IGF-1 -- which girls have naturally as teenagers to help their breasts develop. This chemical-- which is designed to stimulate cell growth-- can send the wrong signal to adult breast tissue." She quotes studies in the US and Canada in 1998 which found that pre-menopausal women with the highest IGF-1 concentration in their blood had a far higher risk of developing breast cancer (similar studies have found a link between IGF-1 and prostate cancer). The drug Tamoxifen, prescribed for women with breast cancer, is thought to work by reducing circulating IGF-1 levels. "Over 70 per cent of the world's population are unable to digest the milk sugar, lactose," she observes. "Lactose intolerance may be nature's early warning system: perhaps nature is trying to tell us that we're eating the wrong food." Homogenization apparently only enables cancer-producing chemicals to reach the bloodstream quicker. Plant has done her homework: "Epidemiological studies have indicated a positive correlation between dairy product consumption and breast cancer risk going back two decades. Studies have found an increase in breast cancer risk among women who consumed milk (especially whole milk) and/or cheese." In 1977 scientists examining the incidence of breast cancer in Japan found "a significant increase in both the consumption of dairy products and the occurrence of breast cancer in urban areas". She quotes more research to suggest that "free oestrogens"-- found in commercial pasteurized whole cow's milk and in skimmed milk-- may stimulate expression of IGF-1 resulting in "indirect long-term tumour growth". She lists dioxins and other damaging environmental chemicals, some of them carcinogenic, which are often fat soluble and end up "particularly concentrated" in milk. As for the argument that we need dairy products because they contain calcium, Plant quotes the World Health Organization's finding that countries which have low intakes of calcium do not have an increased incidence of osteoporosis: "Scientific studies into calcium absorption have shown that only 18 to 36 per cent of the calcium in milk is taken up by the body." Now that we're convinced, what should we be eating instead? Plant recommends soya milk, herbal tea, humous, tofu, nuts and seeds, non-farmed fish, organic eggs and lean meat (not minced beef, which tends to be dairy cow) and plenty of fresh organic fruit and vegetables (in salads, juiced, or lightly steamed). But how can the average woman afford the time and energy it takes to source and prepare such food? "Your priority should be good food, not glop," she stresses. "Put organic food first. Your health is more important than a new car. Anyway, I don't find it too costly-- after all, I don't buy any processed food, which is very expensive." Her husband and two children have no problem following her diet. And although she travels a lot for her job, she finds that she is able to manage-- she includes many tips in her book about what to bring with you on a trip (dried soya milk, herbal tea bags, kelp tablets for iodine, etc). She is about to start writing a new book, a guide for busy women who want to stay healthy. She advocates thorough and frequent self-examination of your breasts, and, if you do develop breast cancer, self-empowerment by working with your doctor "as a partner, not as a victim". She is not a fan of the Louise Hay You Can Heal Your Life philosophy: "I do believe in positive thinking, but I'm also a scientist and I wanted a rational explanation. I have friends with diseases like MS who have read Hay's books and feel guilty because they can't adapt their mental attitude; or, if they have adapted, and the disease doesn't go away, they become distressed." Plant, who is an advocate of acupuncture, has varying opinions of alternative therapies. She is suspicious of aromatherapy, found visualization didn't work, but took much comfort from cognitive therapy and hypnotherapy (both of which helped her to reduce the stress and anxiety caused by having cancer). Overall, however, it was her professional research as a geochemist into the links between disease and trace elements (such as selenium) in the environment in China and Korea that led to her insight about the role of dairy produce in her cancer. She finds the medical profession particularly shortsighted about the influence of environmental factors-- such as pollution and industrialization-- on disease: "I think public health has done a lot for the elimination of infectious diseases, but looking at the environment and nutrition could do the same for a lot of degenerative diseases." Emma's teen years were dominated by the fear that her mother was going to die: "The book's original title was What I Want My Daughter to Know," recalls Plant. God's Way to Ultimate Health

The year was 1976. I was 42 years old and I was told I had colon cancer.
A tumor about the size of a baseball had been found underneath my left rib cage where the transverse and descending colon come together. I was devastated! I asked, ?Why me Lord?? I didn't understand!
It was because of this - what appeared to be a tragic event in my life, and the research and personal experiences that followed - that I was taught GOD?S WAY TO ULTIMATE HEALTH.
Let me elaborate a little more on how it all happened. In 1976 I was the pastor of a Baptist Church, near Glens Falls, New York, a church I founded in 1970. It was a very successful ministry. Membership in this church grew from nothing to over 600 members. In addition to the church, we had a Christian School, grades K through 12, along with a Bible Institute, both of which I also founded. Five large busses brought people to the services, while my radio broadcast, America Needs Christ, was heard on many radio stations each week. Over a dozen young people from our church and school were in college preparing for full-time ministry. Truly, this seemed to be the high point of my ministry and God was certainly blessing.
Just prior to all this, I had watched my mother die of colon cancer. Mom was a registered nurse, and she believed her doctors when they told her that chemotherapy, radiation and surgery were her only hope of surviving. Mom submitted to these treatments and died a horrible death! At the time of her death, I felt it was the treatments she received at the hands of the medical doctors that ultimately caused her death rather than the cancer itself.
What was I to do? Should I submit my body to the same medical treatments mom had? What I had seen my mother go through was so horrible! Also, as a pastor for 20 years, I had sat at the bed-side of so many people and watched the devastating effects of chemotherapy, radiation and surgery experienced by others in the treatment of their cancers, I had also conducted the funerals for many of them.
Another thing that bothered me was that in so many cases prayer didn?t seem to make any difference. I had seen some of the most dedicated Christians, even after great faith, personal prayer as well as collective prayer, get sicker and sicker and often die after going the medical route. What should I do? I had a family and a church that needed me. Many people told me I should go the medical route and some were putting pressure on me to do just that.
It was during this time of uncertainty that I turned to an Evangelist friend in Texas by the name of Lestor Roloff for help. Brother Roloff was one of those ?health-nuts.? We often affectionately referred to him as ?Carrot Juice Roloff?. I was really in a dilemma as to what I should do for my cancer when I called Brother Roloff. His advice to me sounded strange. He advised me not to go the medical route of chemotherapy, radiation and surgery, as mom had gone... BUT TO SIMPLY CHANGE MY DIET TO RAW FRUITS AND VEGETABLES, AND DRINK LOTS OF FRESH CARROT JUICE!
Wow! That sounded too simplistic! But it sure sounded better than the medical route which I had pretty well decided not to pursue. So, overnight I changed from a meat-centered, cooked and processed food diet with plenty of
Sugar desserts, to an all-raw diet with lots of carrot juice. I stayed on this total raw diet for approximately one year. I didn't eat any cooked food during that year ... just raw fruits, raw vegetables and one to two
quarts a day of freshly extracted, raw carrot juice.
The results were spectacular! Almost immediately I started to get well! In less than one year, my tumor had totally disappeared. It simply got smaller and smaller until it was gone. But that was not all. In less than one year, every physical problem I had been experiencing also disappeared! Such physical problems as hemorrhoids, hypoglycemia, severe allergies and sinus problems, high blood pressure, fatigue, pimples, colds, flu ... even
Body Odor and dandruff were gone! Totally healed!
In the years that have followed - and I am over 60 years old at this writing - I have not experienced as much as a cold, sore throat, upset stomach, been to a doctor or taken as much as an aspirin. It is so thrilling, at my age, to still be able to play football, basketball and softball with the boys, jog five miles with ease, and have more energy, endurance and stamina than I had when I was 20 years old.
With that as a little background, let me share how God used this experience in my life to create Hallelujah Acres Ministries and the writing of this book. You see, ever since that day in 1976 when I was told that I had cancer, I have been researching nutrition, healthy lifestyle and how it all relates to the Bible. Also, I have been experimenting on my own body to see how it reacted to various foods. Along with all this, I have also been watching and listening to the testimonies of thousands of others who have made similar dietary changes.
My conclusion after all these years of research and experience is that WE DO NOT HAVE TO BE SICK!!! Disease and sickness are self-inflicted! Almost every physical problem, other than accidents, is caused by improper diet and lifestyle! All we have to do to be well is eat and live according to the way God intended! In the almost 20 years since I recovered from colon cancer, one of the most basic and important things I have learned is that there is a vast difference between God?s ways and man's ways! I have found that while most good Christians want to go God?s way, and have tried to protect themselves from the sins of the world, they have accepted the world's teachings in almost every area of life concerning how to care for our physical bodies, which are the temple of God. A tragic example of this is when you look at the two ways to approach cancer, one of the most devastating and horrible diseases in history. My mother went the world?s way (the orthodox medical route) in an attempt to rid herself of her cancer. She accepted the drugs, radiation and surgery of her doctors, and as far as I am concerned, these treatments were what caused her death! I rejected the world?s way and went God?s way. I turned to the Bible, adopted God?s original diet as found in Genesis 1:29 and every physical problem simply went away, including my cancer.
And my experience was not unique! My wife Rhonda came to a Health Seminar I was conducting in 1991. (We were married April 11, 1992.) She was wearing a size 20 dress at that time and was almost crippled with arthritis. Within approximately one year after changing her diet and lifestyle, she had lost over 80 pounds, reduced her dress size to a 10, and her
Arthritis was totally gone. Even a degenerated spine, the result of a bout with spinal meningitis at age 7, had healed. Yes, X-rays revealed her spine was totally healed, degeneration gone in less than two years after changing her diet and lifestyle.
Another example is a dear friend of mine who was a diabetic when I first met him in 1989. At that time he was trying to control his blood
Sugar with pills prescribed by his doctor. I encouraged him to change his diet in 1989, which he did not do. Two years later the doctor told him that the pills were not adequate any more and that he must be admitted to a hospital to adjust and stabilize his blood
Sugar and start him on two daily shots of injection insulin. Again I told him he needed to change his diet. And again he paid no heed.
After another two years had elapsed, the doctor told him that he needed to put him into the hospital and cut off his foot, which is not an uncommon occurrence for those who go the orthodox medical route in the treatment of diabetes. Only this time he said ?no? to his doctor. Instead he came to one of our seminars and immediately adopted God?s Natural Diet. In less than two weeks he was off insulin and his blood sugar was in normal range. That was over two years ago. Today, he is still off all medication and still has both his feet!
We have received thousands of testimonies as dramatic as these, and some even more so, from people who have switched from the world's way of eating and treating physical problems to God?s way. As you continue to read through this book you will read many of their testimonies.
What we need here in America and around the world is a HEALTH REVOLUTION! We must turn away from the world?s way of dealing with physical and emotional problems and turn to God?s way! The world's way is bankrupting us, costing Americans over a trillion ($l,000,000,000,000.00) dollars a year while the physical and emotional condition of our population -Christian and non- Christian alike - continues to decline.
In order to make intelligent changes, we must realize there are alternatives to the world?s approach to health and how to deal with physical problems. We must understand both ways ... and why one works and why the other does not. Sadly, very few people, including most pastors, preachers and evangelists, have been aware of God?s way, when it comes to the physical body. Thus we have been programmed only in the world?s way, even from the pulpits in our churches.
Because of this programming, most people, when they first hear of God?s ways, think them strange and ?far out?. So in order to help understand the differences, let?s look at a few physical problems being faced by many people today and compare the two ways of dealing with these problems.
Take cardiovascular problems, which result in heart attacks and strokes. Heart disease is the number one killer (50% of all deaths) in America today. Every 34 seconds, someone in America dies from physical problems associated with this disease. The cost to those who go the medical route for the treatment of heart disease is over $110 billion per year.
The first approach usually taken by medical doctors in an effort to control this problem is to prescribe drugs. It is not uncommon for a person with high blood pressure to be given as many as three or four drugs. One of these drugs will chemically force the blood vessels to dilate (get bigger), thus lowering blood pressure. But this drug causes the heart to speed up. In an effort to control the speeding up of the heart caused by the first drug, the doctor usually prescribes a second drug to slow it down. Each of these drugs is capable of causing the body to retain fluid. Thus the doctor often prescribes a third drug, a diuretic, which is designed to chemically force the body to release the extra fluid being retained in an effort to try and keep all these drugs (poisons) from doing more harm.
Almost all of these drugs can cause impotence in males. The diuretics can cause dizziness, headaches and even
Depression ... while at the same time raising cholesterol levels! Then there are the ?beta blockers? that can cause not only depression, but insomnia, as well as liver and kidney damage. The world?s approach of using drugs just causes more and more problems within the body while never dealing with the cause. To top it all off, there is the devastating financial costs of going this medical route. In an effort to reduce cholesterol, doctors prescribe over two billion dollars ($2,000,000,000.00) worth of drugs a year, and frankly, they don't do the job. Yet the side effects from these drugs can cause liver damage, headaches, diarrhea or constipation and are now being linked to depression, violence and even suicide.
Angioplasties (balloon therapy) is another way the world tries to deal with clogged arteries. The average cost of this procedure is $ 15,000, not counting the drugs and follow-up. And yet a study in the Journal of the American Medical Association in 1992 showed that half of the angioplasties in the United States were probably unnecessary. Studies also show that for those who underwent this procedure, 57 percent have their arteries clog back up.
Then there is by-pass surgery. The average cost of this operation is $45,000. It is a very dangerous operation, that finds most patients back on the operating table within three to five years (because their arteries have clogged back up again), if they are not dead. About 5 percent of by-pass surgery patients die on the operating table.
One of the latest of the new technologies for cleaning out the arteries is called atherectomy. This procedure is something like a Roto-Rooter, They take a tiny, high-speed rotating knife, insert it in the arteries and ream out the cholesterol. This also is a very risky surgery.
Now compare all the above efforts by medical doctors (the world?s way) of treating cardiovascular problems with God?s way. Here at Hallelujah Acres, we have testimony after testimony from people who had experienced high blood pressure, high cholesterol and clogged arteries who were able to totally reverse these problems, usually in a very short time, by something as simple as changing their diet and lifestyle. How can this be?
Well, it all goes back to our failure to eat and live the way God intended. The world's diet is full of fat, salt and other contaminates that clog up our arteries and produce all sorts of physical problems. Yet, in most instances, all people have to do to correct a physical problem is change their diet and lifestyle! When they do this, the body will usually cleanse the arteries by itself and the problem will usually simply disappear in a very short time. And furthermore, studies show that if a person stops consuming animal products, they will reduce their chances of ever having a heart attack or stroke by over 96 percent!
What is the cost of going God's way? Probably a reduced grocery bill and a long healthy life. While the cost of going the world's way can be continued physical problems and thousands and thousands of dollars in medical bills for treatments that never get to the root cause - namely diet and lifestyle. I have found that the world's way (accepted medical procedures) for dealing with physical problems is almost always wrong! Take diabetes as another example. Compare the world?s way of treating adult-onset diabetes with God?s way in the case of the friend we just read about. Going the doctor/drug route, my friend had continued to deteriorate for years as his doctor increased his insulin while using
Antibiotics and other drugs to treat infections in his feet, which the doctor told him were being caused by his diabetes.
By the time the doctor told him that he needed to amputate his foot, my friend had already spent over $40,000 treating his diabetes! But he refused to let the doctor cut off his foot. He simply changed his diet and lifestyle, and in less than two weeks he was off insulin and his blood sugar level was in normal range.
As I write this, it has now been two years since my friend changed his diet and lifestyle from the world's way to God?s way. He has taken zero drugs during these two years and he still has both feet. He also had heart problems which have totally disappeared.
Take
Arthritis as another example. The medical profession still says that the cause of
Arthritis is not known. The only thing they tell their patients is that they can expect it to get worse and worse and that there is no way to reverse it. They also treat arthritis with drugs and surgery while the patient?s physical condition usually continues to decline. Cortisone and similar drugs are often administered to try and help relieve the pain, but it doesn?t last long and when the pain returns, it is usually worse than ever. The side-effects from these drugs can include high blood pressure, diabetes, cataracts, bone loss (osteoporosis), ulcers and more.
Now compare the orthodox medical approach to the story of my wife Rhonda with her arthritis and what happened when she changed from the world's way to God's way. She was crippled up with arthritis for over 10 years, unable to walk a block without extreme pain. She took pain pills by the handfuls.
