Ingredients and Instructions
Place 2-1/2 ounces (75 grams) grated creamed coconut or the grated flesh of 1 fresh coconut, in a bowl. Add about 1-3/4 cups (300 ml) hot water. Stir the mixture to blend and allow to cool. Pour the liquid through the cheesecloth and squeeze to extract as much juice as possible. Store in refrigerator.

Coconut Milk
1 cup water
1/2 cup shredded, unsweetened coconut meat
Blend ingredients thoroughly and strain if desired. Coconut milk adds a great flavour to recipes.

Fruit Milks
Fruit milks should be consumed immediately after preparation, or they can discolour and lose their frothiness. For any of the suggestions given below, simply place the ingredients in the blender or food processor and turn on to the highest setting possible. Whip until smooth.

Banana Milk
1 date, peeled and seeded, or 1 tsp maple syrup
1 cup pure water
1 large, ripe banana, peeled

1 ripe cantaloupe, peeled, halved and seeded

1/2 ripe honeydew, peeled, halved and seeded

Selection & Storage
When buying whole coconuts, choose those that are uncracked and still have water(shake it to hear the water inside). Make sure the eyes are intact and free of mold. Whole unopened coconuts can be kept for 2-4 months. Once opened, it will keep in the refrigerator for 1 week or the freezer for up to 9 months. Fresh coconut and milk should be refrigertated; cover the pulp with a little water to prevent it from drying out..

my personal favorite so far is Carob flavored *milk*
follow the above recipe,
(i make mine runnier by using 2 cups water)
but add 1 tablespoon
raw organic carob powder.. just yummy.
also great is to add raw organic shredded coconut
(about 1 oz)
some folks like to strain coconut bits,
but I don't mind them, i like to chew them a bit 8)
I think good experimentation on this would
really expand it/
bit of spearmint?
or cinnamin/nutmegg?
or 1/2 orange added?
worth experimenting the patterns are unlimited.
