My wheatgrass grows perfectly when I soak the
seeds for 8 hours. Why don't you give it a
try and see what happens.

I can't answer you compost question, because
I grow my wheatgrass on a plastic tray. But I
would think that once the seeds are soaked,
their little tails will find their way into
the compost. I wouldn't cover them.
