I had a vasectomy, too, and had similar complaints, so to me your weird swelling issues don't sound all that strange. To expect everything to get back to normal within a week isn't realistic. Maybe in a month? Since you've got a lot of scar tissue with mild inflammation, then it shouldn't be surprising that your "family jewels" would be "out of shape".
In my case, it took the stitches a few weeks to dissolve, and then for the tenderness/soreness to go away it took at least a month. I've noticed that the inside scar tissue around my vas defferens from time to time gets swollen, knotty, a little sore, once in a blue moon, like every couple of years or so (I had the procedure done maybe 10 yrs ago). If I wear jeans that are too tight, or if I have sex with her on top, then sometimes the pressure can create soreness and swelling in my sac that goes away within a few days.
So my point is to just keep an eye on things, but to have some patience to let your body heal.
Having a vasectomy is a very responsible thing to do, and I never regretted my decision to do so.
