I believe I am also having die-off just from being on the diet, if that is of some comfort. I know it is not withdrawal symptoms because of
Sugar or anything else, and now I have been on the candida diet for about a month. Like you, I feel weaker than I should, even if I am on vitamins, but I am probably not taking enough of them. I especially have pains in my joints from die-off, and thanks to the knowledge of many people on this forum, I see I need to take magnesium also. And there are ways to ease the die-off.
Anyway, the first 2-3 weeks were the hardest for me, and now I can function ok and I have quite some energy, until I take anti-fungals which sends me into too much die-off and I have to rest for several days (with more or less the same symptoms as you describe). So I had to slow down, and stick to the diet alone. I guess there is just too much yeast and toxidity! In any case, there is no point in killing too much candida at the time, since the body then gets even more overloaded with toxins. I hope the diet alone works for you in the beginning, and that you will soon feel better!
