i myself if i make a salad throw in anything and every thing i have on hand
i never use dressings personally/ unless it is a homemade vinegar
style one.
with herbs in it..
you can also lightly steam the leaves and flowers just a tad not overcooked and maybe tossin some turnip/onion/ etc
have you ever eaten chard? or collards or mustard greens or turnip greens?
they all are tangy too..
Lapis gave a really good recipe once for steamed greens
very slightly stirfryed in coconut oil..

I LOVE my homemade coleslaw (no mayo) no oils/
but my kids hate it.. i make mine with a odd assortment of fresh veggies and the cabbage esp i keep in small chunks for good crunch.
