Hi Jasmine! Well for salad greens you pick them young and tender, for roots let them stay in the ground till fall, harvest before hard frost or cover with a mulch to store in ground! I do believe dandelion wine is made with the flower tops, picked before turning white or as soon as they are fully open! Then at night catch some fireflys and then you can have a nice dinner with all your danelion treats by firefly light! grog
