you wouldn't necessrily need to drain or rinse.

YOu can also dilute the vinegar with wine and achieve similar results.

This gets to a close approximation of Hassenpfeffer {for rabbit meat} - just add a few Tablespoons of Baking Cocoa to the sauce.

And/or add the innards/liver/etc. to the strained marinade and cook to make a traditional gravy for the marinaded/stewed meat.
