It could be the lactic acid. Kefir probiotics tend to produce a lot of lactic acid. If you get any muscle cramps taper down. Your system can't clear out all the lactic acid fast enough. I used to drink water kefir. If I drink in the morning I would have no gas problem for most of the day.

If you make your own kefir you can also eat the grains. Commercial kefir is not quite real kefir but they use most of the same bacteria. Commercial kefir never forms grains.

I tried to make my own kefir but you really got to keep on with it. My batch started going off so I quite. Too much crazy mold in my house to ferment anything properly. But remember that kefir is a milk product though. I've been tring to get access to raw milk(preferably goat). You have to jump through hoops to get it. That's the best medium for fermenting kefir.
