Bone Broth

Well, I was in inspired to make some bone broth by Finallyfaith's post in the alkaline/acid support forum:

I used beef marrow bones, I got them at wild oats. Easier than chicken, I think. I have made stock before, but the concept of soaking them in vinegar was new to me. I soaked the bones in water & vinegar, then added potatoes(potassium), onions, garlic, carrots(lots), Celery & thyme. I cooked the broth for 2 days in the crock-pot, adding water when necessary. This was also a new concept, cooking for that long. When the broth was done, I tasted some of the vegetables, absolutely NO flavor left in them. All of the flavor(&vitamins and minerals) had gone into the broth!

Then into the fridge for a day to seperate out the fat. I was amazed at how much fat there was in these bones, I must say. Small particles of fat do remain suspended in the broth.

And then the broth! mmmm...Really good, and very energizing. Felt nourishing on a very deep level. The carrots added sweetness. I have had broth for dinner a few nights this week. I find it amazing that one's hunger can be sated with broth...

Now I'm off to get ingredients to make MORE!

One thing I'd like to add is burdock:

"Burdock, a wild root, is very thin, long, and extremely hard to dig up. It's resilience, hardiness, and resistance to cold weather are reputedly transferred to those who consume it." - from "Food and Healing" by Annemarie Colbin

Make bone broth, people! It's really very easy. The only labor-intensive part is at the the beginning, chopping vegetables and such. :)
